Whole wheat blueberry oat pancakes

This daylight savings thing is really screwing me up. I normally get up around 7:30 AM to take Bruin out and get ready for class, but I CANNOT get up before 8 AM now. It is so hard. I cant. I wont. Ughhh! And then going to bed at a reasonable hour is so hard. It is actually impossible for me to go to sleep before midnight. Its a vicious cycle. It needs to end. OK, venting over 🙂

Anyways, as a way to combat this daylight savings saga, I made some pancakes. They made my morning so much more cheerful. These are so filling and such a great way to start the day. The oats give the pancakes a really nice texture and the whole wheat flour really keeps you full for a while after you’ve eaten these. I topped mine with bananas and some greeak yogurt and they were awesome!


1 1/4 cup buttermilk
1 1/2 cups Whole wheat flour
1/2 cup oats
2 T agave
1 1/2 t baking powder
3/4 t baking soda
1/2 t salt
1 egg
3 T butter, melted (I used flax butter, but any butter will work)

Combine flour, sugar, oat, baking powder, baking soda and salt in a large mixing bowl. Set aside. Whisk egg with buttermilk and melted butter. Pour the flour mixture into the buttermilk mixture and mix until there are no lumps.

Heat a large skillet over medium heat and spray with a non-stick cooking spray. Pour 1/4 cup measurements of batter into skillet and place blueberries on pancakes. Cook on one side until small bubbles appear. Flip pancakes and cook on other side until pancakes are browned and cooked through.
