Greek pasta salad

Simple. Clean. Delicious


1/2 lb whole wheat rotini
1 lemon, zested and juiced
1/2 cup extra virgin olive oil
1 small bunch basil, chopped
1 cup cherry tomatoes, quartered
1 can black olives
1/2 bag washed spinach
1/2 cup feta cheese

Cook pasta according to directions on the box. Set aside to cool.

Place lemon zest and juice into a bowl and slowly drizzle in olive oil. Season with salt and pepper and set aside.

Combine tomatoes, basil, cooled pasta, spinach, and olives in a bowl. Pour lemon vinaigrette over top and toss to combine. Top with feta cheese.
