Peach blueberry crumble

I have been totally obsessed with peaches this summer. I’ve used them in salads, in breakfasts, and in too many desserts to even keep track of.

Here is one more peachy dessert. But definitely not the last.


5 large ripe peaches, sliced into wedges
1 pt. blueberries
1/3 cup brown sugar
1 Tbl cinnamon
3 Tbl cornstarch


1 cup oats
1/3 cup flour
1 tsp cinnamon
4 Tbl butter (1/2 stick), melted

Preheat oven to 350 degrees.

In a bowl, combine peaches, blueberries, brown sugar, cinnamon, and cornstarch. Stir to combine thoroughly. Pour into a prepared glass 8×8 baking dish.

In another bowl, combine all ingredients for the crumble. Mix with a fork until crumbly. Evenly distribute on top of the peaches/blueberries.

Bake in oven for 25 minutes, or until topping is brown and filling is bubbly.


By the way, this is one million times better with ice cream 😉 .
